Residents and their guests come together for conversations over wine, cocktails, and beautifully plated seasonal dishes that reflect the Bay Area’s deep culinary culture. The soft lighting and chic interior designs by the renowned firm March and White Design create a warm, elegant atmosphere, with windows looking out over the picturesque San Francisco neighborhood of Cathedral Hill. “I try to expand the boundaries of what senior living cuisine can be,” says Chef de Cuisine Jasmine C.-J., who has been with Coterie since 2022. “How can I offer meals that are healthy and nutritious while still making the flavors pop? How can I give residents the same kind of bespoke, high-end dining experience San Francisco is famous for?” A commitment to seasonal freshness. For Chef Jasmine, it all starts with what’s fresh and seasonal—and the Monarch Room’s menus follow suit. In winter, residents can enjoy delicata squash paired with pomegranate molasses, steelhead trout served with pumpkin purée, or a baby kale salad layered with Asian pears, candied walnuts, and Truffle Tremor® goat cheese. As spring rolls around, the menu shifts to feature beet salads with goat cheese and grilled asparagus tossed with snap peas and ginger-lime tamari vinaigrette.“Being in California, we have access to a wide variety of fresh produce and seafood,” Chef Jasmine says. “So, we try to highlight whatever’s in season at the moment to maximize freshness and flavor. For example, as we designed our spring menu, we made a point of featuring ingredients like asparagus, arugula, and Dungeness crab. As we moved into June and July, we added more pitted fruits like cherries and apricots to the menu.” Some of the spring menu dishes most popular with residents include an asparagus-and-leek vichyssoise, grilled rack of lamb with arugula and chimichurri, and halibut with succotash and smoked pepper purée. The culinary team incorporates as many locally sourced ingredients as possible from nearby vendors like Superior Farms in Sacramento, Field Fresh Farms in Watsonville, and Pitman Farms in Sanger. Superior Farms grilled rack of lamb with chimichurri and beet and arugula salad. Carpaccio made with marinated beets, goat cheese, pickled mustard seeds, citrus zest, micro herbs, and honey. Each menu includes new dishes as well as returning favorites from previous menus. This year’s spring menu brought back one of last year’s most popular appetizers, a beet carpaccio dish made with goat cheese, mustard seeds, and local honey. “I love that dish,” Chef Jasmine says. “It’s very simple, very tasty, and very health-conscious. And the presentation is just beautiful.” Heirloom tomato salad with English cucumbers, stracciatella di bufala, marigold petals, and aleppo pepper. For summer menus, she plans on bringing back a pea soup featuring dashi, pickled red onions, and crème fraiche, which has become a favorite with residents. Chef Jasmine’s heirloom tomato salad featuring thinly sliced English cucumber and stracciatella is also an anticipated summertime favorite among residents. The culinary staff also prepares special menus for holidays. Recent holiday menus have featured braised short rib with horseradish gremolata for Valentine’s Day and a lamb leg carving station for Easter. A flavorful approach to nutrition Coterie’s culinary program always seeks to promote senior health by including a wide range of nutritious ingredients. Many of the recipes on the menu have been developed in alignment with Mayo Clinic’s Healthy Living Program. “We know the culinary choices that can add longevity to people’s lives,” says Mayo Clinic Wellness Executive Chef Jennifer Welper, who specializes in crafting flavorful, healthy dietary plans. Welper notes that the right ingredients can decrease the risks of heart disease and certain cancers while also helping to prevent conditions like osteoporosis, high blood pressure, and diabetes. “And it can absolutely be accomplished without taking the pleasures and goodness out of good food.” When looking for ways to blend flavor and nutrition, Chef Jasmine often draws inspiration from Mediterranean cooking traditions. She favors cooking techniques that maximize flavor naturally, such as roasting, layering acidity, and highlighting herbs, rather than relying heavily on salt and butter. The goal is to produce dishes that are both healthy and delicious. Chef Jasmine delivers the evening’s entrée: grilled rack of lamb and arugula salad. “For senior health, we focus on keeping sodium levels low and using healthier fats,” she says. “But we’re always looking for ways to blend nutrition with flavor in a way that gives our residents a range of health-conscious options. So, we try to offer gluten-free and dairy-free options for our dishes so that everyone can enjoy a version of a dish that meets their particular health goals.” One healthful dinner feature popular with residents is the nightly wok station, which offers rotating stir-fry specials and customizable dishes that add personalized variety to evening meal service. The community has also cultivated a robust wine program featuring local wineries and curated selections overseen by the culinary team. Coterie Cathedral Hill memory care residents enjoy the same high-quality ingredients and seasonal menus as the rest of the community, with a specially dedicated kitchen and dining area. The Coterie Cathedral Hill dining experience Like all great chefs, Jasmine believes the true measure of a dish’s success is how the diners respond to it. And Coterie Cathedral Hill residents give their meals rave reviews. “I look forward to lunch and dinner in The Monarch Room for calm serenity at noon and conviviality at supper,” resident Carol says. “The miso salmon is always perfectly cooked, the beet carpaccio is elegant and delicious, and the roasted asparagus salad has a winning variety of flavors. I’ve never had a bad meal.” Carol’s favorite item on the spring menu is a spaghetti squash and roasted cauliflower salad with pumpkin seeds, dried cranberries, and arugula, with a pool of aged balsamic vinegar at the center.
